Ingredients

  • 3 tablespoons Olive oil (extra virgin recommended)
  • 1 teaspoon Salt (to taste)
  • 1 teaspoon Black pepper (to taste)
  • 1 cup Feta cheese (crumbled)
  • 1 cup Cherry tomatoes (halved)
  • 1 cup Fresh parsley (chopped)
  • 1 medium Cucumber (diced)
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 2 cups Canned chickpeas (drained and rinsed)
  • 1 small Red onion (finely chopped)

Instructions

    In a large mixing bowl, combine the drained and rinsed chickpeas, halved cherry tomatoes, diced cucumber, finely chopped red onion, and crumbled feta cheese.
