Ingredients

  • 1/2 cup Greek yogurt (plain, non-fat)
  • 1 pound Chicken breast (skinless, boneless, cut into bite-sized pieces)
  • 2 tablespoons Olive oil
  • 1 cup Onion (finely chopped)
  • 1 cup Tomato puree (fresh or no-salt-added)
  • 1/4 cup Tomato paste (no salt added)
  • 1/2 teaspoon Paprika (smoked)
  • 1/2 teaspoon Salt (or to taste)
  • 1/4 teaspoon Black pepper (freshly ground)
  • 1 tablespoon Ginger (fresh, grated)
  • 3 units Garlic cloves (minced)
  • 1 teaspoon Garam masala
  • 1/2 teaspoon Turmeric (ground)
  • 1 teaspoon Cumin (ground)
  • 1 teaspoon Coriander (ground)
  • 1/4 cup Cilantro (fresh, chopped)

Instructions

    In a bowl, combine the chicken pieces, Greek yogurt, cumin, coriander, garam masala, turmeric, paprika, salt, and black pepper. Mix well to coat the chicken and let it marinate for at least 15 minutes.

    Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until golden brown.

    Add the minced garlic and grated ginger. Cook for another 2 minutes until fragrant.

    Stir in the tomato paste and tomato puree. Cook for 5 minutes, allowing the sauce to thicken.

    Add the marinated chicken to the skillet. Stir well to combine everything. Cover and cook on low heat for about 20 minutes, or until the chicken is cooked through.

    Garnish with fresh cilantro before serving. Serve hot with whole-grain naan or brown rice.
