Ingredients

  • 1/2 cup Chia seeds (Preferably organic)
  • 2 cups Coconut milk (Full fat, canned)
  • 1/4 cup Maple syrup (Pure maple syrup)
  • 2/15 teaspoon Salt (A pinch of sea salt)
  • 1 teaspoon Vanilla extract (Pure vanilla extract)
  • 1 cup Mixed fresh berries (Blueberries, raspberries, strawberries)
  • 1/4 cup Mint leaves (Fresh, for garnish)

Instructions

    In a medium bowl, combine chia seeds, coconut milk, maple syrup, vanilla extract, and salt. Stir well to combine.

    Cover and refrigerate the mixture for at least 4 hours or overnight, until the chia seeds have absorbed the liquid and the pudding has thickened.

    Stir the pudding before serving to ensure even consistency.
