In a food processor, combine the chickpeas, tahini, lemon juice, and garlic. Process until smooth.
While the processor is running, slowly add the olive oil and continue to process until the mixture is creamy.
Add the cumin and salt, and process again until well blended. Adjust seasoning to taste.
Transfer the hummus to a serving bowl and garnish with paprika and parsley.
