In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
Place the chicken breasts in the bowl and turn to coat them well with the marinade.
Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
Preheat the grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
Remove the chicken from the marinade and place it on the grill. Discard the remaining marinade.
Grill the chicken for 6-8 minutes on each side, or until it reaches an internal temperature of 165°F (75°C).
Remove the chicken from the grill and let it rest for 5 minutes. Sprinkle with fresh parsley before serving.
